How do you do it?
Soaking wood 101 ;
Soaking does increase wood smoldering capabilities Soaking does increase longevity Soaking does increase humidity in the cooker (mucho important !) Soaking does decrease wood consumption Soaking does help. Soaking does not help wood that has been cut and split over 2yrs. (I know somebody that just figured that out)
Mix 1 piece green wood with 3 pieces seasoned wood. That's how I do it. I use primarly Cherry with Hickory bark added. (I soak the bark but not the Cherry)
Green Cherry has a sweet sap that when smoldered gives off a very sweet smoke. Most all "fruit" woods have this capability. (so use green fruitwoods) Almost all hardwoods are the ones that make bitter smoke if burned green. (use seasoned only) I also use Hickory, but I use the shagbark skin and not the wood. The bark has great flavor and you can pick it up in the woods easy enough. NO cutting, splitting, nothing.
You need to test different ways to find the flavor you like. I know guys that don't soak and use only green wood. I also know guys that soak and use seasoned wood. Figure out what you like and become anal about it like me ! Just my 5 cts worth !
